Steaming Milk for Microfoam: The Two Sounds That Matter
A practical guide to steaming silky microfoam at home, from the stretch to the whirlpool, with notes from my Breville Barista Pro.

The first dozen times I steamed milk on my Breville Barista Pro, I made cappuccino foam by accident. Big, dry, stiff bubbles that sat on the espresso like meringue and refused to pour into anything resembling a pattern. The milk wasn’t wrong. My ears were.
Microfoam, the glossy, paint-like milk that makes a flat white taste sweet and lets you pour a leaf, comes down to two phases and two sounds. Once you can hear the difference, the whole thing gets a lot less mysterious.
Microfoam: what steaming milk is actually making
Microfoam is milk with air folded in so finely the bubbles are too small to see. It should look like wet paint, not bubble bath. That texture is what gives a milk drink its sweetness and weight, and it’s the only texture you can pour latte art with.
You build it in two stages:
- Stretching: you add air.
- Texturing: you stop adding air and spin everything smooth.
Phase one: the stretch
Start with cold milk in a cold pitcher, filled to around the bottom of the spout so there’s room to grow. Purge the steam wand first to clear condensation.
Set the wand tip just below the surface, angled slightly to one side, and turn the steam on full. Listen for a steady, gentle “tss, tss”: that’s air being pulled in, each little hiss a tiny bit of volume. Hold it for only a few seconds. This is the part everyone overdoes, stretching far too long and ending up with stiff foam.
- Flat white or latte: grow the milk only a little, maybe 10 to 20 percent.
- Cappuccino: a touch more.
- Loud tearing or screeching: the tip is too far out of the milk and you’re making big bubbles. Sink it slightly.
Phase two: the whirlpool
Once enough air is in, sink the wand deeper and tilt the pitcher so the milk spins in a tight whirlpool. The hissing should stop. Now you’re not adding air, you’re integrating it, dragging the larger bubbles down into the vortex and shearing them into microscopic ones.
This is the phase that turns frothy milk into silky milk. Keep it spinning until the surface looks glossy and smooth with no visible bubbles. Stretch plus texture together usually takes well under a minute.
Temperature: stop sooner than you think

No built-in thermometer? The old hand test works: hold the base of the pitcher, and when it’s too hot to keep your palm there comfortably, you’re done. With practice you’ll feel it before you think about it.
Finishing
Turn off the steam, then wipe and purge the wand immediately so milk doesn’t bake onto it. Give the pitcher a firm tap on the counter to knock out stray bubbles, swirl hard until it looks like wet, glossy paint, and pour right away. Microfoam separates if it sits, the foam climbing on top of the liquid, so the window between texturing and pouring is short.
The home-machine reality
Single-boiler home machines like the Barista Pro have less steam power than a cafe machine, so everything happens a little slower and gentler. That’s forgiving while you learn, since you have more time to react. The trade is smaller batches and a bit more patience. Steam one drink’s worth of milk at a time and you’ll get cleaner results than wrestling a full pitcher.
Get the two sounds right, hissing then silence, stop the heat early, and you’ll be pouring usable microfoam long before you can pour a tidy heart. Worry about the leaf later. Get the milk silky first, and the rest is just practice with your wrist. None of it counts for much without a decent shot underneath, so it pairs naturally with dialing in your espresso.
